Well, in situations where the CPU is pegging, I disable as many tracks as I need to to get it settled down, then do the real-time bounce. Usually, just turning off a reverb on a track I'm not bouncing is enough.

I'm experiencing just the opposite right now. Bounce miss *some* notes, specially with heavy rhythmic contents, while real-time catches all of them.Prime Mover wrote:[...]and real time records typically introduce glitches, where-as bounces can take their time and get it right. So for me, real time records are the risky choice.
I'm disappointed, for bounce used to be reliable in my setup.

This has been the conundrum for me now for several years. Creating a bus architecture flexible enough to handle my projects has proven elusive so printing each instrument has been my answer
Going back to BOUNCE now for creating stems to see if its more reliable than it was years ago. If so it sure beats manual printing!

I set up Bundles for printing my VI's in a single pass. If your looking to create stems to mix in another DAW then you could freeze your tracks all at once - fetch them from the audio folder in the session folder.

WOW! That would tremendous. I just finished bouncing out 42 separate tracks of orchestra. Much faster than manual printing for sure, but still kind of lame.
Can you describe your bundle setup? Screenshot perhaps?
