And I'm back to beach-balling (with Activity Monitor telling me DP is using 100% of the CPU)
That figure, by itself, is meaningless. A couple things:

The macOS Activity Monitor is odd in that the number of Cores isn't factored properly. A 4 Core Mac maxes at 400% — 100 = 25% in this case; a 24 Core maxes at 2400% and so on. There is another consideration, however…

Many Instruments including UVI Workstation use one core per instance so 100% is significant. To spread the load, every VI should be loaded into its own instance — the OS (Mac, Win, Linux etc.) will allocate these among the cores automatically.

Some Instruments have true multi-core support while a few including Kontakt let you set the number of Cores it will use when you set it up.
