I've been doing all my film work at 96 kHz/24-bit in DP, then doing a downgrade to 48 kHz/16-bit (which seems to be the norm, since all HD projects appear to be doing their audio in that sample depth/bit-rate) at the mastering stage in Wave Editor. The main reason I do this is for future-proofing the scores, in case there's a higher-fidelity format in the future that needs it. Now, do I really hear a difference? Not really, though the files are significantly larger and there seems to be a bit more headroom. It's not like the jump from 16-bit to 24-bit, where you suddenly hear twice as many details as you did in 16.

I do plan on remastering my album at 88.2 kHz/24-bit and mixing at 32-bit float.
