mono vs. stereo bundle

Hi
I am new to this forum and have been using Performer Lite now for several months to record solo acoustic guitar.
I have recorded it using two mono tracks and also as a stereo bundle. My question is- what is the difference? I would assume it has to do with panning left and right during mixdown but please enlighten me if there are other reasons for the difference.

Two Mono Tracks provide enhanced control over each individual part of the take... individual track editing and differing plugins, automation and volume, while sacrificing some convenience for a two-input setup. If a true stereo field is being recorded with the desire that it be preserved, a Stereo Track is the way to go as the left and right recordings' phase relationship will remain consistent across edits. Otherwise, either approach works. As the Moody Blues once wrote:
Red is gray and yellow, white, but we decide which is right...
You can always split a Stereo file into two Mono files after the fact if desired:
