If you're curious about RAM usage, fire up activity monitor. You can sort processes by real memory use, and check overall memory with the "system memory" tab.
I would expect most of 16gb would go to waste if each app can only use 3 or 4, but I'm curious to find out...

I disagree. You definitely lose a lot going to mp3 but quality can be extremely variable. A higher bitrate mp3 (256kbps and up) made with a quality encoder can sound pretty good, even close to transparent on the average consumer sound system. 0db on the motu is unity gain; I think that when you turn it down all it does is digitally reduce the gain rather than turn down an analog amp. Not totally sure about this though. As for your main question I personally would deal with volume with the monitors or the knob on the 828 and not in the DA...

You could try asking motu for a new disc. Might work, if you registered your hardware. They'd probably charge you but less than buying something new.
